Bacon-wrapped, asparagus-stuffed chicken thighs with spicy cream sauce - a decadent and satisfying dish.
Ingredients:
  • 12 spears asparagus
  • 1 (8 ounce) package shredded mozzarella cheese
  • 4 skinless, boneless chicken thighs
  • 4 extra-thick bacon slices

  • 2 tablespoons butter, divided
  • 2 jalapeno peppers - stemmed, seeded, and minced
  • 3 tablespoons all-purpose flour
  • 2 cups warm milk
  • 0.5 teaspoon ground black pepper
Instructions:
  • Preheat the oven to 400 degrees F (200 degrees C) and prepare a 9-inch square pan by lining it with parchment paper.
  • Trim asparagus spears so they extend 1 inch beyond each side of thighs.
  • Add 1 cup of mozzarella cheese to a bowl.
  • Flatten chicken thighs and top each with 1/4 cup of mozzarella cheese and 3 asparagus spears. Roll up thighs, wrap each with a slice of bacon, secure with string, then transfer to a baking dish.
  • Roast in the preheated oven until fully cooked, 30 to 40 minutes, or until a thermometer reads at least 165°F (74°C) when inserted into the thickest part of a thigh.
  • In a small saucepan over medium-high heat, first melt 1 tablespoon of butter. Add jalapeños and cook until juices have evaporated, approximately 1 to 2 minutes. Then add the rest of the butter and melt it completely, about 1 minute. Stir in flour until it starts to brown for 1 to 2 minutes. Gradually pour in warm milk, 1/3 cup at a time, ensuring thorough mixing after each addition.
  • Bring the milk mixture to a boil, then lower the heat to medium-low. Simmer the sauce, stirring occasionally, until it thickens, about 7 minutes. Season with salt and pepper, then add the rest of the mozzarella cheese and gently stir until incorporated.
  • Trim the strings from the chicken thighs and generously coat them with the flavorful sauce.
