Delicious keto chicken thighs in creamy mushroom bacon sauce with green onions.
Ingredients:
  • 4 (8 ounce) skin-on, bone-in chicken thighs
  • 4 slices bacon, cut into 1/2 inch pieces
  • 0.33333334326744 cup low-sodium chicken broth
  • 4 ounces sliced mushrooms
  • 0.25 cup heavy whipping cream
  • 2 green onions, white and green parts separated and sliced
Instructions:
  • Heat your oven to 400 degrees F (200 degrees C).
  • Coat chicken thighs generously with a flavorful mix of paprika, salt, and pepper.
  • Fry bacon in a cast iron skillet over medium-high heat until crispy, about 4 to 5 minutes. Transfer to a paper towel-lined plate to drain. Dispose of any leftover grease from the skillet.
  • Place chicken thighs, skin-side down, in the skillet over medium heat for 3 to 4 minutes. Then, flip the chicken over and transfer the skillet to the oven.
  • Bake the chicken thighs until they are fully cooked and reach an internal temperature of 165°F, approximately 30 minutes. Transfer the chicken to a plate, cover it with foil to keep warm, and reserve 2 tablespoons of drippings in the skillet.
  • Place the skillet back on the stove over medium-high heat. Pour in chicken broth while whisking to loosen any brown bits on the bottom. Stir in mushrooms and cook until soft, approximately 3 to 4 minutes. Add heavy whipping cream and whisk until lightly simmering, then lower heat to medium-low. Season with salt and pepper to taste.
  • Place the chicken and its juices back into the skillet, then sprinkle with crispy bacon and fresh green onions. Serve right away, pouring the flavorful sauce over the chicken.
