Garlic green beans sautéed until crisp with gooey Cheddar and crispy bacon - a tasty keto side.
Ingredients:
  • 6 ounces center-cut bacon, cut into small pieces
  • 1 tablespoon butter, or as needed
  • 1 pound fresh green beans, trimmed
  • 0.5 teaspoon garlic powder
  • 3 tablespoons water
  • 2 cups shredded sharp Cheddar cheese
Instructions:
  • Fry bacon in an oven-proof skillet until golden and crisp (about 5-6 minutes). transfer to a paper towel and retain bacon fat in the skillet. Lower heat to medium and stir in butter until there is a total of 2 tablespoons of fat in the skillet.
  • Place green beans into the skillet, season with salt and pepper to taste, sprinkle with garlic powder, and toss to coat. Saute for 3 to 4 minutes. Pour in water to steam the beans. Cook until the water evaporates and the beans are crisp-tender, about 3 to 4 more minutes.
  • Position an oven rack 6 inches away from the heat source and preheat the broiler.
  • Sprinkle shredded Cheddar cheese and cooked bacon over the beans.
  • Broil skillet until cheese is gooey and bubbly, approximately 1 minute. Serve hot and fresh.
