Indulge in a decadent creamy chicken casserole with tender chicken thighs, broccoli, angel hair pasta, and crispy bacon topping.
Ingredients:
  • 1 tablespoon oil
  • 4 boneless skinless chicken thighs
  • 1/2 teaspoon garlic salt
  • 1/4 teaspoon pepper
  • 6 oz uncooked angel hair pasta
  • 1 can (10 3/4 oz) condensed cream of chicken soup
  • 1 1/4 cups half-and-half
  • 1/2 teaspoon smoked paprika
  • 2 cups frozen broccoli florets, cut into smaller pieces
  • 3 slices precooked bacon, crumbled
Instructions:
  • Preheat the oven to 350°F and generously coat a 2 1/2-quart casserole with cooking spray. In a 10-inch skillet over medium-high heat, warm oil. Season chicken thighs with garlic salt and pepper, then cook for 8 to 10 minutes until they turn golden brown and the juices run clear when the thickest part is cut (reaching at least 165°F).
  • Prepare pasta according to package instructions. Drain the pasta. In a large bowl, combine soup, half-and-half, and paprika; set aside 3/4 cup of sauce. Add the cooked pasta and frozen broccoli to the bowl and mix well.
  • Spread the pasta mixture in a casserole dish, layer with chicken thighs, spoon over the reserved sauce, sprinkle with bacon. Bake covered for 20 minutes, then remove the cover and bake for an additional 10 to 15 minutes until the sauce bubbles.
