30-minute rotisserie chicken with savory mushroom sauce.
Ingredients:
  • 2 tablespoons butter or margarine
  • 1 medium onion, sliced (about 1 cup)
  • 1 package (8 oz) sliced fresh mushrooms (3 cups)
  • 2 teaspoons sugar
  • 1 jar (12 oz) chicken gravy
  • 1 tablespoon dry sherry, if desired
  • 1 deli rotisserie chicken (2 to 2 1/2 lb), cut into serving pieces, skin removed if desired
  • 1 tablespoon chopped fresh parsley
Instructions:
  • In a large skillet, melt butter over medium heat. Saute onion and mushrooms for 8 to 10 minutes until onions are tender and slightly browned. Sprinkle in sugar and continue to cook for about 3 minutes until the vegetables are caramelized.
  • Combine the rich gravy and flavorful sherry with the vegetables before gently placing the chicken into the skillet. Make sure to generously spoon the delectable sauce over the chicken for maximum flavor infusion.
  • Place a lid over the pan and allow the chicken to cook for 5 to 10 minutes, remembering to flip it halfway through, until it is heated completely. Finish by sprinkling parsley on top.
