Smothered Chicken and Gravy

Indulge in a classic Southern dish with biscuits, perfect for sharing seconds with your loved ones.
Ingredients:
  • 2 tablespoons vegetable oil
  • 3- to 3 1/2-pound cut-up broiler-fryer chicken
  • 3/4 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 medium yellow onion, thinly sliced
  • 3 green onions, cut into 1-inch pieces
  • 3/4 cup Gold Medal™ all-purpose flour
  • 1/3 cup soy sauce
  • 3 1/2 cups hot water
  • 1 teaspoon onion powder
Instructions:
  • In a deep 12-inch skillet, warm the oil over low heat for 5 minutes. Season the chicken with salt and pepper, then place it in the skillet. Cover the chicken with yellow and green onions. Increase the heat to medium and cook for 10 minutes. Flip the chicken and continue to cook for another 10 minutes or until it turns golden. Lower the heat to low and cook for an additional 5 minutes. Flip the chicken again and cook for another 5 minutes. Finally, remove the chicken from the skillet and transfer it to a large pot or Dutch oven, setting it aside for later.
  • Keep the skillet over low heat. In a medium bowl, whisk together flour, soy sauce, 2 cups of hot water, and onion powder until smooth.
  • Cook the flour mixture in a hot skillet over medium heat, stirring constantly with a wire whisk or fork until it boils and thickens. Gradually stir in the remaining 1 1/2 cups hot water until smooth.
  • 1. Pour the luscious gravy generously over the succulent chicken in a large pot. Bring it to a gentle boil, then lower the heat. Cover and let it simmer for 1 hour, remembering to give it a loving stir every now and then. Be mindful that the delectable gravy might cling to the sides of the pot as it simmers.
