Slow-Cooker Creamy Chicken and Herbed Dumplings

Indulge in succulent chicken smothered in a rich thyme gravy with fluffy herb dumplings, made using Progresso™ broth.
Ingredients:
  • 2 1/2 lb boneless skinless chicken thighs (about 10 thighs)
  • 3 cups Progresso™ chicken broth (from 32-oz carton)
  • 4 medium carrots, peeled and cut diagonally into 1/4-inch slices
  • 3 stalks celery, cut diagonally into 1/4-inch slices
  • 1 medium onion, diced (1/2 cup)
  • 1 teaspoon dried thyme leaves
  • 1/2 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 3 tablespoons cornstarch
  • 2 tablespoons water
  • 1/2 cup heavy whipping cream
  • 2 cups Original Bisquick™ mix
  • 2/3 cup milk
  • 1/4 cup chopped fresh parsley
Instructions:
  • Prepare a 5-quart oval slow cooker by spraying it with cooking spray. Combine chicken, broth, carrots, celery, onion, thyme, salt, and pepper in the slow cooker. Cover and cook on High for 3 to 4 hours or on Low for 6 to 7 hours.
  • Uncover the slow cooker, then shred the chicken into large chunks using 2 forks. If the slow cooker is on Low heat setting, switch it to High. In a small bowl, whisk together cornstarch and water until smooth. Pour the cornstarch mixture and cream into the slow cooker, and stir well to combine. Cover and cook on High heat setting for 20 to 25 minutes, or until slightly thickened.
  • In a medium bowl, combine Bisquick™ mix, milk, and 2 tablespoons of parsley until a soft dough forms.
  • Spoon heaping tablespoons of dumpling batter onto simmering chicken in the slow cooker. Cover and cook for 20-25 minutes, or until a knife inserted into the dumplings comes out clean.
  • Portion the stew and dumplings into 6 individual bowls and generously sprinkle with the remaining fresh parsley. Serve promptly to enjoy while warm.
