Pecan Chicken and Gravy

Indulge in savory chicken and pecans smothered in rich gravy for a delightful dinner.
Ingredients:
  • 1 cup soft bread crumbs
  • 1 cup pecan halves, finely chopped
  • 3/4 cup Gold Medal™ all-purpose flour
  • 3/4 teaspoon freshly ground pepper
  • 4 boneless skinless chicken breasts (1 lb), flattened to 1/8 inch thick
  • 1 teaspoon salt
  • 2 eggs, beaten
  • 6 tablespoons butter
  • 3 cups milk
Instructions:
  • First, combine bread crumbs and pecans in a shallow dish. Next, in another shallow dish, mix 1/2 cup of flour with 1/4 teaspoon of pepper. Sprinkle 1/2 teaspoon of salt over the chicken. Proceed by coating the chicken in the flour mixture, dipping it into eggs, and finally coating it with the pecan mixture.
  • In a spacious nonstick skillet, melt a luxurious 2 tablespoons of butter over medium heat. Sear 2 succulent chicken breasts for 6 to 8 minutes, flipping once, until cooked through. Set aside the first batch, tented with foil to stay warm. Repeat with another 2 tablespoons of butter and the rest of the chicken.
  • Melt the remaining butter in the skillet over medium heat. Add the rest of the flour and stir until blended. Gradually pour in the milk and cook for 8 to 10 minutes, stirring frequently, until thickened. Season with the remaining salt and pepper. Serve the gravy with the chicken.
