Elevate chicken sandwiches with a delightful nutty crunch.
Ingredients:
  • 350g chicken breast
  • 1 celery stalk, trimmed, finely chopped
  • 82.50 ml pecan nuts, toasted, finely chopped
  • 81.68 gm whole-egg mayonnaise
  • 8 slices white bread
  • 1/2 small baby butter lettuce, leaves separated
  • 4 slices wholemeal bread
Instructions:
  • In a saucepan, gently cook chicken submerged in cold water until fully cooked. Allow to cool, then finely chop. Mix with celery, pecans, and mayonnaise in a bowl.
  • Lay out 4 slices of white bread. Spread half of the chicken mixture on top. Add half of the lettuce. Place wholemeal bread slices on top of the lettuce. Spread the wholemeal bread with the rest of the chicken mixture. Finish by adding the remaining lettuce and white bread slices on top.
  • Trim the crusts off the sandwiches using a serrated knife, then slice each sandwich into 3 finger-sized pieces. Secure with toothpicks and serve.
