Create a memorable chicken sandwich with tangy garlic aioli, crispy apple, celery, and pecans.
Ingredients:
  • 150g chicken breast fillet
  • 1/2 tsp chicken stock powder
  • 1 small red apple (such as royal gala), cored, finely chopped
  • 1 spring onion, finely chopped
  • 20.00 ml finely chopped pecan nuts
  • 1 small lemon, rind finely grated, juiced
  • 10.00 gm garlic aioli
  • 2 tsp chopped fresh dill
  • 2 Sandwich Thins
Instructions:
  • Microwave the chicken in a bowl filled with cold water and stock powder, covered with plastic wrap, on High for 5-6 minutes until cooked through. Let it sit for an additional 8 minutes to finish poaching. Remove the plastic wrap and transfer the chicken to a plate to cool. Finally, finely chop the chicken.
  • In a bowl, toss together celery, apple, spring onion, pecans, lemon rind, aioli, dill, chicken, and 2-3 teaspoons lemon juice. Season with salt and pepper, and thoroughly incorporate.
  • 1. Gently separate the sandwich thins. 2. Spread the filling evenly on 2 halves. 3. Top with the remaining halves. 4. Slice in half before serving.
