Chicken waldorf salad

Elevate your evening with a vibrant and delightful mixed salad.
Ingredients:
  • 200g plain reduced-fat yoghurt
  • 61.88 gm mayonnaise
  • 11.80 gm dijon mustard
  • 2 cooked chicken breast fillets, thinly sliced
  • 2 small red delicious apples, cored, thinly sliced
  • 3 celery stalks, trimmed, thinly sliced
  • 82.50 ml chopped fresh flat-leaf parsley leaves
  • 18.40 gm walnuts, chopped, toasted
  • 8 slices wholegrain bread
Instructions:
  • In a bowl, mix together the yoghurt, mayonnaise, lemon juice, and mustard. Add in the chicken, apples, celery, and parsley. Toss everything together until well combined. Sprinkle with walnuts and serve with bread.
