Pecan-crusted chicken breasts fried and drizzled with a decadent bourbon sauce. A gourmet dish from a top NYC restaurant, passed down from my Mother. Simply irresistible. Enjoy!
Ingredients:
  • 0.5 cup finely chopped pecans
  • 0.5 cup dry bread crumbs
  • 8 skinless, boneless chicken breast halves
  • 0.25 cup clarified butter, melted
  • 0.25 cup Dijon mustard
  • 0.25 cup dark brown sugar
  • 2.6666667461395 tablespoons bourbon whiskey
  • 2 tablespoons soy sauce
  • 1 teaspoon Worcestershire sauce
  • 0.75 cup unsalted butter, chilled and cut into small cubes
  • 0.5 cup sliced green onions
Instructions:
  • Combine pecans, bread crumbs, and 2 tbsp clarified butter. Spread on a plate. Coat chicken breasts on both sides with the mixture. Fry in 2 tbsp clarified butter until golden brown and cooked through, about 10 minutes per side.
  • Combine Dijon mustard, brown sugar, bourbon, soy sauce, and Worcestershire sauce in a small saucepan. Whisk until smooth and simmer over medium-low heat. Remove from heat and whisk in unsalted butter one piece at a time. Do not heat again.
  • Place the chicken breasts on a large serving plate, drizzle with the sauce, and garnish with green onions.
