Chocolate Bourbon Pecan Pie

Elevate pecan pie with chocolate chips and bourbon for a delicious twist.
Ingredients:
  • 1 prepared pie crust , chilled
  • 6 tablespoons unsalted butter
  • 1 cup (180g) dark brown sugar, lightly packed
  • 1 cup corn syrup
  • 3 large eggs
  • 2 tablespoons bourbon
  • 1/2 teaspoon kosher salt
  • 2/3 cup (110g) semi-sweet or dark chocolate chips or chunks, divided
  • 1 1/4 cups (125g) pecan halves
Instructions:
  • Preheat the oven to 400°F, placing the rack on the bottom third.
  • For the crust: Roll out the pie dough into a 12-inch circle on a floured surface. If using store-bought dough, unroll it into a 9-inch pie pan. Press the crust into the pan, trim any excess dough with scissors, leaving a 1-inch overhang. Fold edges under and crimp. Chill the lined pie pan while preparing the filling.
  • Prepare the filling: Microwave butter in a medium heatproof bowl in 30-second intervals until just melted. Stir in brown sugar and corn syrup. Add eggs and mix until smooth. Stir in bourbon, vanilla, and salt.
  • Prepare the pie: Take the chilled lined pie pan from the fridge and set it on a rimmed baking sheet. Spread the chocolate chips evenly on the bottom, saving a handful for topping. Add the pecans in an even layer, then mix the filling and gently pour it over the chocolate chips and pecans to coat. Decorate the top with the reserved chocolate chips.
  • Simply slide the baking sheet with the pie into the oven and bake at the initial temperature for 10 minutes. After that, lower the temperature to 350°F and keep baking until the crust turns golden brown and the filling sets around the edges with a slight jiggle in the center, usually for 40 to 50 minutes.
