Decadent derby pie with chocolate chips and bourbon for a rich and delicious twist on pecan pie.
Ingredients:
  • 1 (9 inch) store-bought pie crust, unbaked
  • 3 tablespoons bourbon whiskey
  • 0.75 teaspoon instant coffee granules
  • 0.75 cup chopped pecans
  • 0.75 cup white sugar
  • 3 eggs
  • 0.75 cup white corn syrup
  • 6 tablespoons butter, melted
  • 1.5 teaspoons vanilla extract
  • 0.75 cup semisweet chocolate chips
Instructions:
  • Heat your oven to a toasty 425°F (220°C).
  • Gently mold pie crust into a 9-inch pie plate, then delicately pierce the bottom of the crust with a fork.
  • Place the pie crust in the preheated oven until it becomes dry, typically 4 to 5 minutes. Allow it to cool. Then, lower the oven temperature to 350 degrees F (175 degrees C).
  • In a small pot, gently warm bourbon whiskey over low heat. Add instant coffee and stir until dissolved. Mix in pecans.
  • In a bowl, whisk together sugar and eggs until thoroughly mixed. Stir in corn syrup, melted butter, and vanilla extract. Gently mix in pecan mixture and chocolate chips. Pour the filling into the pie crust.
  • Bake in the preheated oven for 40-45 minutes until the filling is firm and golden brown and the crust is lightly browned. Let it cool completely for at least 30 minutes before slicing.
