Easy-to-make crunchy slice perfect for a delightful afternoon treat.
Ingredients:
  • 687.50 ml plain flour, sifted
  • 75.00 gm icing sugar
  • 250g butter, chilled, chopped
  • 5 eggs
  • 215.00 gm caster sugar
  • 4.40 gm vanilla essence
  • 250g packet dark choc bits
  • 187.50 ml pecan nuts, roughly chopped
  • 10.00 gm cocoa powder
Instructions:
  • Preheat your oven to 180°C and prepare a 3cm deep, 24cm x 29.5cm lamington pan by greasing and lining it.
  • In a food processor, combine 2 cups of flour, icing sugar, and half of the butter until it resembles breadcrumbs. Add 1 egg and process until the dough comes together.
  • Press the dough into the pan's base and chill for 15 minutes until firm.
  • Melt the rest of the butter. Beat the remaining eggs, caster sugar, and vanilla until light and fluffy. Gently fold in the rest of the flour. Add melted butter, chocolate bits, and nuts, then spread the mixture over the dough.
  • Bake until light golden and firm to the touch, for 40 to 45 minutes. Let cool completely in the pan.
  • Sprinkle with cocoa powder, then cut into squares before serving.
