Derby Day Chocolate Chip Cookies

Pecan and chocolate chip cookies - Buttery, soft treat inspired by Derby Day pie.
Ingredients:
  • 1 cup butter, softened
  • 0.5 cup white sugar
  • 5 tablespoons Kentucky bourbon
  • 1.5 cups chopped pecans
  • 1.5 cups semisweet chocolate chips
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C) and mix flour, baking soda, and salt in a medium bowl using a fork.
  • Blend together the butter, white sugar, and brown sugar until creamy. Add eggs one at a time, then mix in the bourbon. Gently incorporate the flour mixture until just combined. Fold in pecans and chocolate chips. Scoop large spoonfuls onto ungreased baking sheets.
  • Bake in the preheated oven until edges are lightly browned, approximately 10 minutes. Cool on the cookie sheet for 1 minute, then transfer to wire racks to cool completely.
