Decadent bourbon pecan and chocolate chip pie with a buttery crust.
Ingredients:
  • 3 extra large eggs
  • 2 tablespoons corn oil
  • 1 tablespoon bourbon whiskey
  • 1 teaspoon vanilla extract
  • 0.75 cup all-purpose flour
  • 0.75 cup white sugar
  • 0.75 cup packed light brown sugar
  • 1.125 cups butter, softened
  • 1.5 cups chopped toasted pecans
  • 9 ounces semisweet chocolate chips
  • 1 (9 inch) unbaked pie crust
Instructions:
  • Preheat your oven to 325°F (165°C).
  • In a large mixing bowl, whip eggs with an electric mixer on high speed for about 3 minutes until foamy. Add corn oil, bourbon whiskey, and vanilla extract and beat until just incorporated.
  • Blend flour, white sugar, and brown sugar into egg mixture until smooth, then mix in butter.
  • Fold the pecans and chocolate chips into the filling with care.
  • Gently press the pie crust into a 9-inch pie dish, then add and spread the filling evenly over the crust.
  • Bake in a preheated oven for 55 to 60 minutes, or until the top turns golden brown and a knife inserted between the center and edge of the filling comes out clean.
  • Allow the pie to cool on a wire rack for a minimum of 15 minutes before serving. Enjoy either warm or at room temperature.
