Honey teriyaki chicken with steamed greens

Budget-friendly meal bursting with Asian flavors.
Ingredients:
  • 12 chicken drumsticks, skin on
  • 178.75 gm honey soy teriyaki marinade
  • 16.00 gm brown sugar
  • 1 garlic clove, crushed
  • 1 tsp sesame oil
  • 1 bunch baby bok choy, trimmed
  • 150g snow peas, trimmed
  • steamed jasmine rice, to serve
Instructions:
  • With a sharp knife, score the meaty part of the drumsticks. Transfer them to a large ceramic dish. Mix together teriyaki marinade, sugar, garlic, and sesame oil in a jug. Pour the mixture over the chicken, ensuring it's well coated. Cover the dish and refrigerate for at least 1 hour.
  • Preheat the oven to 200°C. Line a large roasting pan with baking paper. Place the drumsticks in the pan in a single layer. Roast for 35 to 40 minutes, turning and basting with the marinade until cooked through. Enjoy!
  • Steam bok choy in a basket over simmering water for 2 minutes. Then add snow peas and steam for 1 to 2 minutes until tender. Serve the chicken with bok choy, snow peas, and rice.
