Whip up a quick and nutritious falafel bowl for a satisfying vegetarian meal.
Ingredients:
  • 40g almond
  • 225g pkt falafel balls
  • 350g pkt Mediterranean-style salad kit or 350g pkt kaleslaw kit
  • 200g tub hommus
  • 80g fetta, crumbled
Instructions:
  • Preheat the oven to 180°C. Line a baking tray with baking paper and place the falafels on it. Bake for 8 minutes or until they are heated through.
  • Prepare the pre-made salad kit in a large bowl according to the package instructions, saving the dressing. Serve the hummus in individual small bowls.
  • Assemble salad, falafel, and hummus in individual bowls. Top with the remaining dressing, and finish with a sprinkle of feta and almonds.
