Fast winter soup

Cozy winter vegetable soup to nourish and warm you.
Ingredients:
  • 1 onion, chopped
  • 1 long red chilli, seeds removed, finely chopped
  • 1 celery stalk, chopped
  • 1 carrot, chopped
  • 2.50 gm ground cumin
  • 1 tsp ground coriander
  • 250.00 ml red lentils, rinsed, drained
  • 1L (4 cups) chicken style liquid stock or vegetable liquid stock
  • Low-fat natural yoghurt, to serve
Instructions:
  • In a large saucepan over medium heat, warm up the olive oil before adding in the onion, chili, celery, and carrot. Sauté for 2-3 minutes until fragrant.
  • Stir in cumin and coriander and cook for another minute.
  • Pour the red lentils and chicken or vegetable stock into the pot, bring to a boil, and simmer for 8-10 minutes until lentils are tender.
  • Season generously with salt and pepper, then serve in bowls topped with a dollop of yogurt.
