Fast Apple Rhubarb Pie

Rosy pink apple and rhubarb pie, ready in 40 minutes for a dollop of whipped cream.
Ingredients:
  • 1 (9 inch) pie shell
  • 6 apple - peeled, cored, and chopped
  • 3 rhubarb, diced
  • 1 cup white sugar
  • 2 teaspoons ground cinnamon
Instructions:
  • Preheat the oven to 440°F (220°C).
  • In a large bowl, toss together the apples and rhubarb. In a separate small bowl, mix sugar and cinnamon, then sprinkle over the fruit. Stir until the fruit is fully coated. Spoon the mixture into the pastry shell.
  • Place in a piping hot oven for 40 minutes.
