Ham and apple rice stir-fry: Succulent rice with diced ham and crisp apple chunks.
Ingredients:
  • 1.25L (5 cups) salt reduced chicken style liquid stock
  • 27.30 gm olive oil
  • 2 small Granny Smith apples, halved, cored, cut into 1cm pieces
  • 440g (2 cups) arborio rice
  • 125ml (1/2 cup) white wine
  • 300g leg ham slices, cut into 1.5cm pieces
  • 62.50 ml fresh continental parsley leaves, coarsely chopped
  • 70g (1 cup) finely grated parmesan
Instructions:
  • In a saucepan, bring the stock to a gentle simmer over high heat, then reduce heat to low to maintain the simmer.
  • In a large saucepan over medium heat, melt the oil and butter until sizzling. Sauté the apple and onion until softened, about 5 minutes. Stir in the rice until coated, about 2 minutes. Pour in the wine and simmer until the liquid reduces by half, stirring constantly.
  • Pour half of the stock into the rice mixture, stirring until absorbed. Then, stir in the rest of the stock gradually until absorbed. Fold in the ham, parsley, and the remaining stock until the risotto is creamy and the rice is al dente.
  • Plate the risotto evenly among dishes and generously sprinkle with Parmesan cheese. Accompany with a side of fresh mixed salad leaves for a delightful contrast in flavors and textures.
