Collard Greens

Cook collard greens with salt pork or ham hocks until tender, then add sugar and apple cider vinegar for a tangy kick.
Ingredients:
  • 6 ounces salt pork
  • 8 cups water
  • salt to taste
  • 2 bunches collard greens
  • 0.5 cup cider vinegar
  • 4 teaspoons white sugar
Instructions:
  • In a medium pot, combine pork, water, and salt. Bring to a boil over medium-high heat, skimming off any rising fat. Reduce heat to low and simmer for 30 minutes.
  • Prepare the greens by removing any damaged or yellow parts of the leaves. Trim the tough ends off each leaf. Place the greens in a colander and wash them well until the water runs clear. Fold each leaf in half along the center vein, then fold again before cutting in half.
  • Combine the prepared greens into the simmering liquid and let it simmer together for about 1 hour on low heat. Serve the flavorful mixture in shallow bowls, and finish with a sprinkle of sugar and a drizzle of cider vinegar in each bowl. Enjoy your delicious meal!
