Savory collard greens cooked with crispy bacon - irresistible even for non-vegetable lovers.
Ingredients:
  • 0.5 pound bacon ends and pieces
  • 1 large white onion, chopped
  • 1 tablespoon minced garlic
  • 0.25 teaspoon red pepper flakes, or to taste
  • 0.25 teaspoon salt
  • 0.25 teaspoon ground black pepper
  • 4 cups water
  • 2 bunches collard greens, coarsely chopped
Instructions:
  • In a sturdy pot, sizzle bacon over medium-high heat, flipping occasionally, until the fat starts to render, approximately 5 minutes. Discard half of the bacon grease.
  • Lower the heat to medium and incorporate the onion. Sauté, stirring frequently, for roughly 5 minutes. Introduce the garlic, red pepper flakes, salt, and pepper; continue to cook and stir for 2 minutes.
  • Turn up the heat to high and swiftly add 3 cups of water to the pot. Allow it to come to a boil, stirring to release the flavorful browned bits from the bottom. Incorporate the chopped collard greens and an extra cup of water. Bring it back to a boil. Lower the heat and let it simmer until the greens are soft, approximately 1 hour.
