Spicy Collard Greens with Bacon

Spicy collard greens with crispy bacon - a quick and flavorful homemade dish!
Ingredients:
  • 2 pounds collard greens, ribs and stems removed and leaves coarsely chopped (about 8 cups)
  • 6 cups water
  • 6 slices bacon, chopped
  • 1 medium onion, chopped (1/2 cup)
  • 1 jalapeño chili, seeded and finely chopped
  • 1/2 teaspoon dried thyme leaves
Instructions:
  • In a 4-quart Dutch oven, bring water to a boil. Add collard greens and boil for 30 minutes. Drain the greens.
  • In a large skillet, cook the bacon over medium-high heat until crispy, stirring occasionally. Use a slotted spoon to remove the bacon, leaving 1 tablespoon of bacon fat in the skillet. Drain the bacon on paper towels.
  • In the same skillet, warm up the leftover bacon fat over medium heat. Add the rest of the ingredients and cook for 5 minutes, stirring regularly. Mix in the collard greens and bacon, then lower the heat. Cover and simmer for about 15 minutes, stirring occasionally, until the collard greens are super tender.
