Spicy Southern collard greens with smoked turkey, a Thanksgiving classic.
Ingredients:
  • 0.25 cup olive oil
  • 2 tablespoons minced garlic
  • 5 cups chicken stock
  • 1 smoked turkey drumstick
  • 5 bunches collard greens - rinsed, trimmed and chopped
  • salt and black pepper to taste
  • 1 tablespoon crushed red pepper flakes
Instructions:
  • In a large pot over medium heat, gently sauté garlic in oil until fragrant and golden brown, about 1 minute. Add chicken stock and turkey leg, cover, and simmer for 30 minutes.
  • Toss in the collard greens and turn up the heat to medium-high. Cover and cook, stirring occasionally, until the greens have wilted, approximately 45 minutes.
  • Lower the heat to medium. Season with salt and pepper to your liking. Cover and cook until the greens are tender and dark green, for about 45 to 60 minutes.
  • Drain the greens, saving the flavorful cooking liquid. Add red pepper flakes for extra kick. Reheat any extras with the reserved liquid for maximum flavor.
