Fluffy protein pancakes made with cottage cheese, milk, and whole wheat flour - a delicious and nutritious breakfast in minutes!
Ingredients:
  • 1 cup whole wheat flour
  • 0.5 teaspoon baking soda
  • 1 cup low-fat cottage cheese
  • 0.75 cup low-fat milk
  • 2 tablespoons vegetable oil
Instructions:
  • Combine flour, baking soda, cinnamon, and salt in a large bowl, mixing well.
  • Combine cottage cheese, milk, eggs, and oil and whisk in a separate bowl. Pour into the flour mixture and whisk until just combined; batter will be thick.
  • Preheat a generously oiled griddle over medium-high heat until a water drop sizzles on contact. Pour 1/4 cup batter onto the griddle and cook until golden brown with bubbles breaking the surface, around 1 to 2 minutes. Flip and cook until firm, about 1 minute. Continue with remaining batter.
