Chicken and snow pea Chinese-style pancakes

Make Chinese-style pancakes for a tasty, affordable dish.
Ingredients:
  • 150g (1 cup) plain flour
  • 0.60 gm salt
  • 435ml (1 3/4 cups) skim milk
  • 1 egg
  • 2 (about 500g) single chicken breast fillets
  • 40.00 ml char siu sauce
  • 80g snow peas, trimmed, thinly sliced lengthways
  • 80g snow pea sprouts
  • 4 green shallots, ends trimmed, cut into 8cm lengths, thinly sliced lengthways
  • 12 sprigs fresh coriander
Instructions:
  • In a large bowl, mix flour and salt. Create a well in the center. In a separate container, whisk together milk and egg. Slowly whisk the milk mixture into the flour until smooth. Cover the batter with plastic wrap and refrigerate for 30 minutes.
  • Fill a large frying pan halfway with cold water. Cover and bring to a boil over high heat, then reduce to low. Simmer the chicken covered for 15 minutes until cooked through. Place the chicken on a plate and let cool for 15 minutes before shredding into thin strips.
  • In a bowl, mix the char sui sauce and oyster sauce. Heat a large non-stick frying pan over medium-high heat. Pour 2 tablespoons of the pancake batter into the pan, swirl to make a 9cm pancake. Cook for 1 minute until bubbles form and the pancake is golden underneath. Flip and cook for 30 seconds until cooked. Transfer to a plate, cover with foil to keep warm, and continue with the remaining batter to make more pancakes, reheating the pan as needed.
  • Lay out a pancake on a clean work surface. Spread a bit of char sui sauce mixture on it. Add snow peas, snow pea sprouts, green shallots, coriander, and chicken. Fold one end and roll it up to wrap the filling, keeping the other end open. Transfer to a serving platter. Repeat with the rest of the pancakes and ingredients. Serve promptly.
