Chicken and snow pea laksa

Delight your loved ones with a tasty Asian chicken and snow pea laksa.
Ingredients:
  • 9.20 gm vegetable oil
  • 150g laksa paste
  • 400ml can coconut milk
  • 750ml chicken stock
  • 1 long red chilli, finely chopped (optional)
  • 24.40 gm fish sauce
  • 40.00 ml palm sugar
  • 21.00 gm lime juice
  • 600g RSPCA Approved chicken breast fillets, thinly sliced
  • 150g snow peas, trimmed
  • 450g pkt hokkien noodles
  • 1 long red chilli, extra, thinly sliced
  • 82.50 ml coriander leaves, to serve
  • 4 spring onions, green part only, thinly sliced
Instructions:
  • Begin by heating oil in a wok until shimmering. Stir in laksa paste and cook for 2 minutes until aromatic. Add coconut milk, stock, chopped chilli, fish sauce, palm sugar, and lime juice. Bring the mixture to a boil, then reduce heat and simmer for 10 minutes.
  • Cook chicken for 5 mins, then add snow peas and cook for 3 mins until tender crisp.
  • Heat noodles according to packet instructions. Divide among large serving bowls. Pour laksa mixture over noodles and top with sliced chili, fresh coriander, and spring onion.
