Filipino Chicken and Snow Pea Stir-Fry with a savory oyster sauce blend and fresh vegetables.
Ingredients:
  • 1 tablespoon olive oil
  • 1 tablespoon oyster sauce
  • salt and pepper to taste
  • 2 pounds bone-in chicken pieces, such as legs, thighs, and wings
  • 1 tomato, diced
  • 1 carrot, sliced
  • 2 stalks celery stalks, sliced
  • 1 pound fresh snow peas, trimmed
  • 1 teaspoon water
Instructions:
  • In a large skillet over medium heat, heat olive oil and sauté onion and garlic until fragrant, for about 5 minutes. Mix in oyster sauce, season with salt and pepper, then add chicken. Cover and cook for 10 minutes. Add tomato, carrot, and celery, cover, and cook for another 5 minutes. Ensure chicken reaches 165°F (74°C) and is no longer pink near the bone. Lastly, fold in snow peas before serving.
  • In a small bowl, whisk together the cornstarch and water until smooth, then stir it into the skillet liquid. Simmer until the sauce thickens, about 5 minutes. Serve hot.
