Tender chicken in creamy mustard sauce is irresistibly delicious.
Ingredients:
  • 4 small (150g each) chicken thigh cutlets
  • 4 small (90g each) chicken drumsticks
  • 600g orange sweet potato, peeled, chopped
  • 36.40 gm olive oil
  • 1 medium leek, trimmed, halved, washed, thinly sliced
  • 2 garlic cloves, crushed
  • 125.00 gm dry white wine
  • 11.80 gm wholegrain mustard
  • 23.40 gm dijon mustard
  • 255.00 gm chicken style liquid stock
  • 126.25 gm pure cream
  • Chopped fresh chives, to serve
  • Steamed green beans, to serve
Instructions:
  • Preheat your oven to 200°C / 180°C fan-forced. Place the chicken cutlets skin-side up in a roasting pan. Surround the chicken with sweet potato, then drizzle everything with 1 tablespoon of oil. Season with salt and pepper . Roast for 40 minutes until the chicken is cooked through and the potato is tender.
  • Heat the rest of the oil in a frying pan over medium-high heat. Sauté leek and garlic for 5 minutes until softened. Pour in wine, let it simmer, then stir in mustard, stock, and cream. Let it simmer for 15 minutes until slightly thickened. Serve chicken, sweet potato, and beans on plates, sprinkle with chives, and drizzle with the flavorful mustard sauce.
