Impress guests with our savory roasted chicken in a flavorful mustard herb sauce.
Ingredients:
  • 8 (200g each) chicken marylands, skin removed
  • 146.25 gm dijon mustard
  • 4 garlic cloves, crushed
  • 20.00 ml chopped fresh tarragon leaves
  • 62.50 ml chopped fresh flat-leaf parsley leaves
  • 2 medium brown onions, finely chopped
  • 165.00 gm dry white wine
  • 168.30 gm salt reduced chicken style liquid stock
  • Fresh flat-leaf parsley leaves, to serve
  • Tarragon leaves, to serve
Instructions:
  • First, preheat your oven to 200°C/180°C fan-forced. Then, layer the chicken in a large flameproof roasting pan. Next, mix mustard, garlic, tarragon, and parsley in a bowl and generously spread over the chicken.
  • Roast the chicken until juices run clear when the thickest part is pierced with a skewer. Transfer to a plate and cover loosely with foil to keep warm.
  • Begin by heating up a roasting pan over medium-high heat. Add a generous amount of oil and the chopped onion. Stir and cook for 5 minutes until the onion is soft and translucent. Pour in the wine and allow it to come to a boil.
  • Pour in the flavorful stock and let it gently simmer for 8 minutes or until the sauce reaches a beautiful thick consistency. Place the chicken back into the pan. Cook it while generously spooning the sauce over it for 3 to 5 minutes until it is heated through. Finish by sprinkling some fresh parsley and tarragon on top. Serve and enjoy your delicious dish.
