Easy and elegant: Roasted veggies with honey-mustard chicken for weeknights or gatherings.
Ingredients:
  • 3 cups peeled and cubed butternut squash
  • 2 carrots, peeled and cut 1-inch pieces
  • 1 large parsnip, peeled and cut into 1/2-inch pieces
  • 1 small sweet potato, peeled and cut into 1/2-inch pieces
  • 1 small red onion, cut into 1-inch wedges
  • 2 tablespoons extra-virgin olive oil
  • 2 teaspoons minced fresh rosemary
  • 0.5 teaspoon sea salt
  • 0.25 teaspoon fresh ground black pepper
  • 4 skinless, boneless chicken breast halves
  • 0.25 teaspoon salt
  • 1 pinch ground black pepper to taste
  • 1 tablespoon extra-virgin olive oil
  • 0.5 cup low-sodium chicken broth
  • 0.25 cup white wine
  • 2 tablespoons honey
  • 2 tablespoons whole-grain mustard
Instructions:
  • Preheat your oven to 425 degrees F (220 degrees C) while placing an 11x17-inch baking sheet inside.
  • Toss butternut squash, carrots, parsnip, sweet potato, and red onion with 2 tablespoons of olive oil, rosemary, 1/2 teaspoon sea salt, and 1/4 teaspoon pepper until well coated. Spread the vegetables out evenly on the preheated baking sheet.
  • Roast the vegetables in the preheated oven for 15 minutes, then stir and roast for an additional 15 minutes until tender.
  • Flatten chicken to 1/2-inch thickness; season with 1/4 teaspoon salt and black pepper to taste on a work surface.
  • In a large skillet over medium heat, heat 1 tablespoon of olive oil until shimmering. Cook the chicken until it's no longer pink in the center, around 5 minutes per side. Transfer the cooked chicken to a bowl.
  • Combine chicken broth and wine in the skillet, bring to a boil, and use a wooden spoon to scrape up the flavorful browned bits from the bottom of the pan for about 2 minutes.
  • Combine the sweet honey and tangy mustard with the aromatic wine mixture. Toss in the chicken pieces and ensure they are fully coated. Serve with delicious roasted vegetables on the side.
