Savor crispy chicken nuggets with zesty mustard dip.
Ingredients:
  • 3 (about 500g) single chicken breast fillets, trimmed, chopped
  • 70g (1 cup) fresh breadcrumbs made from day-old bread
  • 62.50 ml finely chopped fresh chives
  • Salt & freshly ground black pepper
  • 50g (1/3 cup) plain flour
  • 1 egg, lightly whisked
  • 30g (1/3 cup) dried (packaged) breadcrumbs
  • 30g (1/3 cup) cornflake crumbs (Kelloggs brand)
  • 90g (1/3 cup) extra light sour cream (Pauls brand)
  • 23.40 gm wholegrain mustard
  • Pinch of salt
Instructions:
  • Preheat the oven to 220°C and line 2 baking trays with non-stick baking paper.
  • In the food processor, pulse the chicken until finely chopped. Then, combine it in a large bowl with the fresh breadcrumbs, chives, salt, and pepper. Mix together using a wooden spoon until fully incorporated.
  • Form 1 tablespoon of chicken mixture into a small patty and place on a lined tray. Repeat with the rest of the mixture. Set up bowls with flour and egg separately. Combine breadcrumbs and cornflake crumbs in a bowl. Coat each patty in flour, then egg, then breadcrumb mixture. Place on lined baking trays.
  • Bake the nuggets in a hot oven for 20 minutes, flipping them halfway through, until they are fully cooked.
  • Prepare the mustard sauce by mixing sour cream and mustard in a small bowl. Season with salt to taste.
  • Enjoy golden crispy chicken nuggets accompanied by a tangy mustard sauce.
