Elevate children's parties with irresistible homemade chicken nuggets.
Ingredients:
  • 500g chicken mince
  • 1 garlic clove, crushed
  • 1 tsp all purpose seasoning
  • 312.50 ml panko breadcrumbs
  • 2kg large sebago potatoes, peeled
  • Olive oil cooking spray
Instructions:
  • Preheat your oven to 180°C/160°C fan-forced. Line 2 large baking trays with baking paper, then mix chicken, garlic, seasoning, and 1/2 cup breadcrumbs in a large bowl.
  • Spread the remaining breadcrumbs on a large plate. Shape the mixture into 32 nuggets using level tablespoons. Roll each nugget in the breadcrumbs to coat. Arrange the nuggets on a tray. Cover and refrigerate for 20 minutes.
  • Place potatoes in a large saucepan and cover with cold water. Bring to a boil over high heat, then reduce heat to medium and cook uncovered for 10 minutes until just tender. Drain and let them cool for 5 minutes.
  • Slice the potatoes into 1cm-thick slices and use a 5cm star-shaped cutter to create potato stars. Place the stars on a tray, spray with oil, and bake for 20 minutes. Flip the chips over, then add the nuggets to the oven. Bake for an additional 30 minutes until the chips are golden and the nuggets are fully cooked. Serve and enjoy!
