Homemade air fryer chicken nuggets with a crispy breading and juicy interior marinated in pickle brine for unbeatable flavor!
Ingredients:
  • For chicken nuggets
  • 1 1/2 pounds chicken breast
  • 1 cup pickle juice
  • 1 cup all-purpose flour
  • 2 teaspoons kosher salt
  • 1 teaspoon black pepper
  • 3 large eggs
  • 1 1/2 cups plain or Italian breadcrumbs
  • Nonstick spray, for cooking
  • For easy honey mustard sauce
  • 1/2 cup Dijon mustard
  • 1/4 cup honey
Instructions:
  • Cut the chicken breast into 1-inch long and 1/2-inch thick nugget-sized pieces, resembling planks instead of cubes. Place the nuggets in a bowl with pickles and marinate for 30 minutes to an hour. Avoid marinating for longer than an hour to prevent over-pickling.
  • Prepare the dredging station: Mix flour, garlic powder, salt, and pepper in one bowl. Whisk eggs until smooth in another bowl. Place breadcrumbs in a third bowl.
  • Pat dry the nuggets from pickle juice using paper towels. Coat each nugget in flour, then eggs, and finally breadcrumbs. Cook one batch of nuggets while breading the others.
  • Air fry chicken nuggets: Lightly spritz your air fryer basket and nuggets with nonstick cooking spray. Arrange nuggets in a single layer, ensuring space between each piece. Air fry at 350˚F for 6 minutes, then flip and cook for an additional 5-6 minutes until golden brown and internal temperature reaches 165˚F. Repeat process for remaining nuggets.
  • Mix mustard and honey in a small bowl to create the honey mustard sauce. Serve with warm chicken nuggets or your preferred dip.
