Golden chicken nuggets with choice of dipping sauce - a real crowd pleaser!
Ingredients:
  • 250g bread
  • 300g mayonnaise
  • 10.00 gm basil pesto
  • 11.80 gm wholegrain mustard
  • 22.00 gm sweet chilli sauce
  • 120g parmesan
  • 50g plain flour
  • 4 chicken breast fillets, cut into bite-sized pieces
  • Sunflower oil, to deep-fry
  • Lemon wedges, to serve
Instructions:
  • Preheat your oven to a gentle 120°C. Bake the bread on a tray for about 15 minutes, or until it becomes delightfully dry and perfectly crisp.
  • Divide the mayonnaise into 3 small bowls. Stir pesto into one bowl, mustard into another, and chili sauce into the third. Chill until ready to use.
  • Tear the bread into large pieces and blitz in a food processor with the parmesan until fine crumbs form. Transfer to a plate. In a shallow bowl, whisk the eggs. Spread the flour on a separate plate and season with salt and pepper.
  • Coat the chicken in flour, egg, and breadcrumbs, pressing gently to ensure full coverage.
  • Heat oil to 190°C in a deep-fryer or large saucepan. Deep-fry the nuggets in batches for 3-4 minutes until golden and cooked through. Drain on paper towel and keep warm. Serve with dipping sauces, lemon wedges, and a green salad, if desired.
