Proper chicken nuggets

Boost fiber and cut calories by swapping white bread for wholemeal and baking instead of deep-frying.
Ingredients:
  • 1 kg free-range skinless chicken breasts
  • 2 cloves of garlic
  • 1 level teaspoon sweet smoked paprika
  • 1 heaped tablespoon Greek yoghurt
  • 1 large free-range egg
  • 250 g wholemeal bread
  • 50 g Parmesan cheese
Instructions:
  • Cut 1kg of chicken breasts into nugget-sized portions. Use scales to ensure each nugget is around 30g. Transfer the chicken to a tray. Crush 2 unpeeled garlic cloves over the chicken. Add 1 tsp sweet smoked paprika, 1 heaped tbsp yogurt, 1 egg, a pinch of salt and black pepper, zest of 1 lemon, and lemon juice. Massage the marinade into the meat and marinate in the fridge for at least 1 hour. Tear 250g wholemeal bread and 50g Parmesan into a food processor. Add 2 tbsp oil and blend into breadcrumbs. Coat the chicken in the breadcrumbs. Place on a tray lined with greaseproof paper. Cook in a preheated oven at 180°C/350°F/gas 4 for 15-20 minutes.
