Crunchy British fish cakes made with mashed potatoes, fried to golden perfection, and paired with a delightful homemade tartar sauce.
Ingredients:
  • 0.5 cup mayonnaise
  • 2 tablespoons capers, drained and chopped
  • 1 tablespoon finely chopped shallot
  • 1 tablespoon finely chopped Italian parsley
  • 1 tablespoon finely chopped fresh tarragon
  • 2 teaspoons prepared horseradish
  • 1 teaspoon Dijon mustard
  • 1 pinch cayenne pepper
  • 0.5 cup milk
  • 1 bay leaf
  • 1 pound cod, cut into 1-inch pieces
  • salt and freshly ground black pepper to taste
  • 12 ounces russet potato, peeled and quartered
  • 1 tablespoon sliced fresh chives
  • 1 teaspoon finely grated lemon zest
  • 0.33 cup all-purpose flour
  • 1 large egg, beaten
  • 1 cup panko bread crumbs, or as needed
  • 0.25 cup vegetable oil, or as needed
Instructions:
  • Prepare to embark on a culinary journey by assembling all the required ingredients.
  • Combine mayonnaise with capers, shallot, parsley, tarragon, horseradish, mustard, and cayenne in a bowl for tartar sauce. Chill in the refrigerator until ready to use.
  • In a saucepan, combine milk and a bay leaf, then lay the fish pieces on top. Season with salt and simmer over medium heat for 1 minute, stirring occasionally. Turn off the heat once the fish firms up but before it flakes. Cover and let sit for 5 minutes, then drain and allow to cool for 10 minutes before refrigerating until ready to use.
  • While you wait, bring a pot of water to a gentle boil with a pinch of salt. Cook the russet potato until it is tender but still firm.
  • Drain the potato and mash it in a bowl. Season with salt, black pepper, and cayenne. Stir in parsley, chives, lemon zest, and 1 tablespoon of tartar sauce. Combine well.
  • Sprinkle chilled fish on top and gently mix until well blended.
  • Divide the mixture equally and shape into patties.
  • Coat cakes in flour, then brush with beaten egg, and finally coat in bread crumbs.
  • Warm oil in a skillet over medium heat. Pan-fry patties until they are golden brown and cooked through, about 3 to 4 minutes per side.
  • Pat dry on paper towels.
  • Drizzle with tangy tartar sauce for a delightful finishing touch!
