Whip up crispy Parmesan chicken nuggets by coating boneless chicken in butter, breadcrumbs, and Parmesan cheese, then bake. Enjoy with your preferred dipping sauce!
Ingredients:
  • 1/2 cup butter, melted
  • 1 teaspoon minced garlic
  • 1 cup dried breadcrumbs
  • 1/3 cup grated Parmesan cheese
  • 2 tablespoon chopped fresh parsley
  • 1/4 teaspoon salt
  • 1/4 teaspoon garlic salt (can substitute regular salt)
  • Large pinch dried Italian seasoning
  • 1/8 teaspoon ground black pepper
  • 2 pounds skinless, boneless chicken breasts or thighs, cut into 1- to 2-inch pieces
Instructions:
  • Preheat your oven to 450°F and place a rack in the center.
  • Pat the chicken pieces dry: Gently press paper towels against the chicken pieces to remove excess moisture and ensure a crisp breading when baked.
  • First, flavor the melted butter with minced garlic by stirring them together in a small bowl. Then, in a separate bowl, combine the breadcrumbs with Parmesan, parsley, salt, garlic salt, Italian seasoning, and black pepper.
  • Coat the chicken pieces in the melted butter mix and then in the Parmesan breadcrumb mixture to ensure an even coating. If the butter thickens due to cold chicken pieces, simply reheat it.
  • Arrange the chicken on a 9- x13-inch (or larger) roasting pan, ensuring there is space between each piece. If needed, use additional roasting pans. Finish by drizzling any leftover garlic butter over the chicken.
  • Preheat the oven to 450°F. Bake the chicken uncovered for 15 minutes until fully cooked and the internal temperature reaches 165°F. Let it cool briefly before serving, noting that the bottom side will be more browned, especially with a non-stick pan.
