Spicy Parmesan-coated baked chicken thighs, no breadcrumbs needed.
Ingredients:
  • 0.33333334326744 cup olive oil
  • 1 cup grated Parmesan cheese
  • 1 teaspoon celery salt
  • 1 teaspoon cayenne pepper
  • 0.5 teaspoon garlic powder
  • 8 (5 ounce) boneless, skinless chicken thighs
Instructions:
  • Preheat the oven to 375°F (190°C) and line a jelly roll pan with foil for easy cleanup.
  • In a shallow bowl, drizzle olive oil. In another shallow bowl, combine Parmesan cheese, celery salt, cayenne pepper, and garlic powder.
  • Cut the chicken thighs in half. Coat each piece in olive oil ensuring both sides are covered, then press one side into the Parmesan mixture until fully coated. Arrange on the baking sheet with the coated side facing up.
  • Roast in the oven until the chicken is cooked through and the juices run clear, approximately 25 minutes. Use an instant-read thermometer to ensure the internal temperature reaches 165 degrees F (74 degrees C).
