Simple and versatile baked chicken meatballs, perfect for any day or occasion - a must-have recipe!
Ingredients:
  • Non-stick cooking spray or 2 teaspoons olive oil
  • 1 pound ground chicken (preferably with 5% or more fat)
  • 1/2 cup plain breadcrumbs
  • 1/4 cup finely grated Parmesan or Romano cheese
  • 3 tablespoons milk (any kind)
  • 3 tablespoons finely chopped fresh parsley, loosely packed
  • 2 cloves garlic, grated
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon freshly ground black pepper
  • 1/4 teaspoon crushed red pepper flakes, optional
Instructions:
  • Preheat the oven to 425°F. Prepare a large baking sheet by lining it with parchment paper and lightly greasing with cooking spray or brushing with 1 teaspoon of olive oil.
  • Prepare the chicken mixture: In a large bowl, gently combine ground chicken, breadcrumbs, Parmesan, milk, parsley, garlic, egg, salt, black pepper, and red pepper flakes (optional) using clean hands. Mix just until combined to ensure tender meatballs; avoid over-mixing.
  • Form the meatballs: Pinch off mixture to create 1-inch meatballs. Gently roll into balls without over-compressing to keep them light. Place on baking sheet, ensuring they are evenly spaced. You should end up with around 24 meatballs. Lightly coat tops with cooking spray or remaining 1 teaspoon olive oil.
  • Place the meatballs in the oven and bake for 10 to 14 minutes until fully cooked and golden brown on the bottom. Check for doneness by cutting one open to ensure it is no longer pink inside or by using an instant-read thermometer - it should register at least 165°F. Avoid overcooking to keep the meatballs moist. Note that the tops of the meatballs may not brown as much in the oven.
  • Serve the meatballs as desired - with sauce, in a soup, or in a sandwich. Store leftovers in the fridge for up to 4 days. Reheat in the microwave, oven at 350°F for 10-15 minutes, on the stove over medium heat for 5-10 minutes, or in hot broth/sauce until warmed through.
