Simple Creamy Garlic-Mushroom Chicken

Baked chicken with creamy mushroom soup, tangy sour cream, sweet corn, and savory Parmesan cheese.
Ingredients:
  • 1 teaspoon vegetable oil
  • 0.5 onion, chopped
  • 1 tablespoon crushed garlic
  • 2 skinless, boneless chicken breast halves, cut into 1-inch pieces
  • 1 pinch salt
  • 1 pinch ground white pepper, or to taste
  • 1 pinch ground black pepper to taste
  • 1 (10.75 ounce) can condensed cream of mushroom soup
  • 0.5 cup mayonnaise
  • 0.5 cup grated Parmesan cheese
  • 0.25 cup frozen corn
  • 2.5 tablespoons sour cream
  • 1 tablespoon milk
  • 1 cup shredded Cheddar cheese
Instructions:
  • Preheat your oven to 375 degrees F (190 degrees C).
  • In a large skillet over medium-high heat, sizzle onion and garlic in oil until soft and aromatic, around 3 minutes. Toss in chicken, season with salt, white pepper, and black pepper. Saute until cooked through, 7 to 10 minutes; then place in an 8-inch square baking dish.
  • Mix condensed soup, mayonnaise, Parmesan cheese, corn, sour cream, and milk in a bowl. Pour the mixture over the chicken in the baking dish and top with Cheddar cheese.
  • Place the dish in the preheated oven until the cheese is melted and bubbling, for approximately 20 minutes. Allow it to rest for 5 minutes before serving.
