Creamy chicken and snow pea penne recipe

Easy creamy chicken pasta with plenty of veggies and bold flavors.
Ingredients:
  • 250g penne
  • 120g snow peas, halved diagonally
  • 200g cup mushrooms, thinly sliced
  • 200g brown mushrooms, thinly sliced
  • 4 bacon rashers, trimmed, chopped
  • 300ml light cooking cream
  • 23.40 gm wholegrain mustard
  • 1/2 Hot Roast Chicken, skin and bones removed, meat shredded
  • 62.50 ml finely chopped chives
Instructions:
  • Cook the pasta in a large pot of boiling water according to the package instructions until al dente; add the snow peas for the last 2 minutes of cooking. Drain thoroughly.
  • Heat oil in a large frying pan over high heat. Cook mushrooms and bacon until mushrooms are golden brown. Add cream and mustard, bring to a boil, then simmer until sauce thickens slightly.
  • Combine the chicken and pasta with the creamy sauce in the pan, tossing until well mixed and heated through.
  • Portion the pasta onto individual plates, season to taste, and garnish with a sprinkle of chives before serving.
