Ingredients:
  • 4 small chicken breast fillets, trimmed
  • 75g snow peas, trimmed
  • 117.50 gm sour cream
  • 20.00 ml chopped tarragon
  • 2 tsp chopped chives
  • 2 small baby cos lettuce, washed, dried and trimmed, leaves separated
  • 6 radishes, trimmed, washed, and thinly sliced
  • 62.50 ml shaved parmesan
Instructions:
  • In a large, deep frying pan, bring water to a boil over medium heat. Add chicken breasts and simmer on low for 5 minutes, turning once. Remove pan from heat and let chicken sit in liquid for an additional 8-10 minutes until fully cooked. Take out chicken from pan and set aside.
  • Boil the snow peas in a pot of salted water for 1-2 minutes until tender. Transfer to cold water to cool, then drain. Slice any large snow peas in half diagonally.
  • Combine sour cream, 1/4 cup of water, tarragon, and chives in a bowl and whisk until fully mixed.
  • Combine fresh, crisp lettuce leaves with radishes and snow peas on serving plates. Artfully slice each succulent chicken breast diagonally over the salad. Finish by dusting with delicate shavings of parmesan and a drizzle of dressing.
