Poached chicken with braised cos and champ potatoes

Elevate mashed potatoes with green onions and spinach for irresistible Irish champ.
Ingredients:
  • 18.20 gm extra virgin olive oil
  • 800g chicken breast
  • 1 white onion, thinly sliced
  • 1 tsp dried rosemary
  • 510.00 gm salt reduced chicken style liquid stock
  • 2 baby cos lettuces, quartered
  • 250.00 ml frozen peas
  • 800g cream delight potatoes, peeled, halved
  • 128.75 gm milk, warmed
  • 6 green onions, thinly sliced
  • 75g baby spinach
  • 40g butter
Instructions:
  • To make champ potatoes, simply boil a potato until tender in a large saucepan, then drain and return to the pan. Mash until smooth and mix in milk, onion, spinach, and butter. Season with salt and pepper, and stir everything together until well combined.
  • Heat oil in a large frying pan over medium-high heat. Add chicken and cook for 2 minutes on each side until lightly golden. Transfer to a plate.
  • Adjust heat to medium. Combine onion, garlic, and rosemary in the pan. Sauté for 5 minutes or until onion is tender. Place the chicken back into the pan, pour in the stock, cover, and bring to a boil. Lower the heat to a simmer and cook for 10 minutes until the chicken is fully cooked. Remove the chicken to a cutting board and slice. Stir in cos and peas and simmer for an additional 3 minutes.
  • Plate the chicken alongside the flavorful sauce, crispy cos lettuce, sweet peas, and creamy champ potatoes.
