Ready in 20 minutes, indulge in delicious sweet and sour chicken served with flavorful fried rice.
Ingredients:
  • 36.40 gm peanut oil
  • 500g RSPCA Approved chicken breast fillets, sliced
  • 1 red onion, cut into wedges
  • 200g snow peas, trimmed
  • 1 red capsicum, seeded, chopped
  • 515g Kan Tong Sweet & Sour Cooking Sauce
  • 1/2 x 440g can pineapple pieces in natural juice, drained
  • 400g can baby corn spears, drained
  • 2 x 250g pkts Uncle Ben’s Express Special Fried Rice
  • 42.00 gm Naturally Brewed Soy Sauce
  • 60g pea
  • 1 spring onion, sliced diagonally
  • Coriander leaves, to serve
Instructions:
  • Heat half of the oil in a large frying pan over medium-high heat until shimmering. Add the chicken and cook, stirring occasionally, for 5 minutes or until golden brown.
  • Combine onion, snow peas, and half of the capsicum in the pan. Cook for 3 minutes until vegetables start to brown. Stir in the cooking sauce and pineapple. Heat through for 2 minutes.
  • Next, heat the remaining oil in a medium frying pan over medium heat. Sauté the corn and remaining capsicum until they start to brown, about 2 minutes. Stir in the rice, soy sauce, and peas until heated through, about 2 minutes. Finally, mix in the spring onion. Enjoy!
  • Garnish the sweet and sour chicken with fresh coriander leaves and plate alongside the fried rice.
