Ingredients:
  • 2 tablespoons vegetable oil
  • 1 cooked ham bone (1 to 2 lb), with remaining meat still attached
  • 2 cups thinly sliced onions
  • 1/2 teaspoon red pepper flakes
  • 5 cloves garlic, chopped
  • 1 tablespoon packed brown sugar
  • 2 cups Progresso™ chicken broth
  • 1 1/2 lb collard greens, ribs removed, cut in 1-inch strips (about 3 bunches)
  • 1 teaspoon apple cider vinegar
Instructions:
  • Prepare the slow cooker by spraying it with cooking spray. In a large skillet, heat 1 tablespoon of oil over medium heat until hot. Sear the ham bone in the oil for 4 to 6 minutes, turning it several times, until it is browned on all sides. Then, transfer the ham bone to the slow cooker.
  • In the same skillet, pour in the remaining tablespoon of vegetable oil. Sauté the onions and pepper flakes over medium heat for 2 to 4 minutes until they start to brown, stirring often. Add garlic and brown sugar; cook for 1 minute. Pour in the broth and bring to a gentle simmer. Gradually add greens, handful by handful, until they begin to wilt.
  • Gently pour the mixture around the ham bone in the slow cooker. Cover and cook on Low heat setting for 4 to 6 hours, or until the collards reach your desired tenderness. Remove the bone, chop the ham from the bone, and mix it into the greens. Finally, stir in the vinegar.
