Savory greens in flavorful broth with a kick of spice, smoky sweetness, and warming paprika - a crowd-pleaser for all diets!
Ingredients:
  • 2 tablespoons olive oil
  • 0.5 white onion, diced
  • 2 cloves garlic, chopped
  • 1 bunch collard greens, stems removed and leaves torn into bite-size pieces
  • 0.5 teaspoon red pepper flakes
  • 2 cups vegetable broth
  • 2 tablespoons apple cider vinegar
  • 1 teaspoon brown sugar
  • 0.25 teaspoon liquid smoke flavoring
  • 0.25 teaspoon smoked paprika
Instructions:
  • In a large saucepan over medium heat, sauté onion and garlic in oil until golden and aromatic, for 3 to 4 minutes. Stir in collard greens and red pepper flakes, cooking until greens are just wilted, for about 2 to 3 minutes.
  • In a pan, combine broth, vinegar, brown sugar, liquid smoke, and paprika. Cover and simmer over medium heat until greens are very tender, about 35 to 45 minutes. Strain before serving.
