Try this unique twist on collard greens stir-fry for a delicious and refreshing change from the traditional southern style.
Ingredients:
  • 2 tablespoons butter or margarine
  • 2 tablespoons finely chopped onion
  • 1 to 2 teaspoons grated gingerroot
  • 2 pounds collard greens or spinach, coarsely chopped
  • 1 serrano chili, seeded and finely chopped
Instructions:
  • In a Dutch oven, gently melt the butter over medium heat.
  • Sauté onion and greens in butter until tender, stirring occasionally. Drain excess liquid.
